I have always loved granola, however I have not always loved the nutrition facts that come along with it! I found a recipe that I could make from home that is pretty easy and healthy to make. I tweaked it a bit to make it a healthy honey almond granola recipe. I have made a batch once a week now for several weeks. I love adding granola to other healthy snacks to mix things up.
Healthy Honey Almond Granola Recipe
3 Cups of Oats
1 Cup of Sliced Almonds
2 Tablespoons of Honey
¼ Cup of Olive Oil
¼ Cup Packed Light Brown Sugar
1 Teaspoon Cinnamon
Optional: 1 Cup Coconut, 1 Cup Dried Cranberries
Preheat oven to 350 degrees.
Mix oats and almonds in a large mixing bowl. In a microwave safe bowl combine: oil, sugar and cinnamon. Microwave until sugar begins to dissolve (about 30 seconds). See picture above.
Mix wet ingredients together well before adding to dry ingredients. Add wet ingredients to dry ingredients and mix well.
Then, spread mixture out on a rimmed baking sheet. Bake for 20-25 minutes mixing several times during backing. The mixing is important to ensure it doesn’t burn! Transfer to bowl to cool before storing.
*If you add coconut it is added to the dry mix of ingredients. If you add cranberries add it to the granola after it has been cooked.
