Newlywed Recipe-Breakfast Wrap

Breakfast for Ryan and I is a tricky subject until we found this breakfast wrap recipe. We leave the house to head to the gym. Then, go strait to work and some how need to fit breakfast in there. We were eating “Go Lean Kashi Cereal” for the longest time. Ryan found a recipe that we just had to try! I have been eating the following recipe for about 3 weeks now every morning for breakfast. We are out of them now 🙁 It is on my to do list for spring break (which is next week!!!)!
Ingredients
1 dozen whole week tortillas
18 eggs
2 cans of black beans
2 cans of whole corn
1 jar of salsa
Cheese of choice
1. Crack eggs into one bowl removing 2/3 of the egg yolks. Beat eggs with fork and poor into medium pot.

2. Drain and rinse beans  and corn. Once eggs start to cook add beans and corn to eggs. Keep cooking the egg mix, stirring continuously and scraping the eggs off of the bottom and side of the pot until the eggs are thoroughly cooked. Remove from heat.

3.Take out a single tortilla wrap and put a large spoonful of the filling onto the tortilla (about two heaping tablespoons). Put a tablespoon or so of salsa on top, along with cheese. Then wrap tortilla closed.

To freeze: wrap each breakfast wrap in saran wrap then place in freezer bag.

To eat from freezer: Defrost in microwave for 2 minutes then heat for 2 minutes. Times may vary.

*You can add any veggies you would like. To do so cook them first in the pot before adding the eggs.

    Your breakfast burritos sound delish and I can’t wait to try them! I do have a question though. What size tortilla’s did you use? Thank you.

      Hi Deb- Great question! Just depends on the size that you want to make. I think I used the regular size. What is that? Like 10/12 inches? Not the huge ones , but not the mini’s. After awhile I stopped using tortillas and just made breakfast bowls because I was getting away from bread. But I think any size tortilla would work. You would just need to play around with the reheat time. Hope you enjoy them!
