Easy and Quick Chicken Soup

This chicken soup is quick and easy. It has a Mexican feel to it so just add some cheese and tortilla chips with it and you are good to go.

Easy Healthy Chicken Soup

4 Cups of Water

3 Chicken Bullion Cubes

1 Can Whole Kernel Corn

2 10 oz Can Chicken

1 Can Black Beans

1 Can Rotel

1) Put water and bullion cubes into large pot. Heat until bullion cubes dissolve.

 2) Drain can of corn and beans. (I usually cook beans the day before for another meal and then use the extra in here. I will also buy corn on the cob when on sell (10 cents a cob!). Cook it, cut kernels off and freeze them. Then use in recipes. Those two things makes this recipe have less sodium and a little more natural.)

3) Once the bullion cubes are dissolved add all ingredients to the pot. (I will also use fresh or frozen chicken breasts instead of canned chicken- again to reduce sodium and make more natural.) Let simmer until it comes to a boil.

4) Serve with cornbread. Enjoy!

This soup takes about 10 minutes to make if you used all the canned products. Super fast, super easy! And the best part is it is super cheap (see prices below)! Making a few changes to the recipe also makes it healthy! Depending on the amount of time we have depends on how I make it. This is also a great meal to freeze. Just thaw out and reheat! We hope you enjoy this newlywed recipe!

 

Cost of recipe

Bullion Cubes: 10 cents each =30 cents

Corn: 50 cents (or less if you buy cobs on sell)

Beans: 69 cents (less if you buy and cook packaged beans instead of can)

Chicken:  about $3.oo for 2 cans (less if you use frozen or fresh chicken on sale)

Rotel: $1.50 (maybe make your own if you have a garden!)

Cornbread: 50 cents

$6.49 or less for this meal! Feeds family of 4.
