Lemon Chicken Fettuccine

Today is National Pasta Day! So of course I had to share one of my favorite pasta dishes.

Right now one of my favorite pasta dishes is Lemon Chicken Fettuccine! It is simple to make and has a nice clean taste.

This lemon chicken fettuccine pasta dish gives you the carbs you are craving but leaves out all that extra junk that often comes with creamy sauces.

 

Ingredients

8-ounces Fettuccine, cooked

3 tablespoons extra virgin olive oil

3 to 4 boneless chicken breast halves, cubed

pepper, to taste

1 pint sweet grape tomatoes, halved

1 package (8-ounces) mushroom slices

For the Dressing

2 tablespoons extra virgin olive oil

1 lemon, juiced

1/8 teaspoon garlic powder

pepper, to taste

grated parmesan cheese

Directions

1) Heat olive oil in a large pan over medium heat; add chicken. Cook until chicken is browned on all sides, stirring occasionally.

2) Add halved grape tomatoes and sliced mushrooms. Frequently stirring, continue to cook for 3 to 4 minutes, or until chicken is thoroughly cooked.

3) Add cooked fettuccine to chicken mixture and cook until heated through, stirring frequently.

4) In a small bowl, combine olive oil, lemon juice, garlic powder, pepper; stir it until thoroughly mixed.

5) Stir into pasta mixture. Remove from heat. Sprinkle with grated parmesan cheese.

6) Serve and enjoy!

      The great thing is there are so many things you can do with pasta! We have even found quinoa pasta and pasta that is made with vegetables!
