Learning a New Skill- Newlywed Recipe: Berry Pie-Part 2

Yesterday I posted about how Ryan got so excited about a pie my friend talked about making. So I decided to learn a new skill- I needed to learn how to bake a pie. Yesterday I posted how we made the pie crust. Today we will move on to the rest of the pie!

So once we had the crust in the bottom of the pie pan it was time to move on to the pie filling.

First you need to decide what kind of fruit you would like to have in your pie. I did blueberries, blackberries and strawberries.

Get enough fruit to fill your pie pan. I used a whole small container of blueberries and blackberries and a half container of strawberries.

Rinse and cut any fruit (strawberries in this case) that needs to be smaller.

Mix all of the following ingredients:

Fruit (enough to fill the pie pan)

1/4 Cup Melted Butter

1 Tablespoon Lemon Juice

1/3 Cup Sugar

3 Tablespoons of Cornstarch (Secret: Flour will work if you don’t have cornstarch- just add a little extra)

1 Teaspoon Ground Cinnamon

Mix all together and then pour into pie pan.

This is where we rolled out our second ball of dough like I described in yesterday’s post.

We then used cut outs to make the top pieces. Check out the cutters we used below.

For a lattice top: cut strips that are long enough to cover the whole pie then crisscross them.

Pull the extra dough off around the sides of the pie pan leaving some to pinch on the lip of the pan.

Once the top crust is on beat one egg in a small bowl and brush onto crust. This helps it to turn brown when baking.

To pinch the sides use your thumb and pointer finger on the right hand (assuming your right handed) while using your left pointer finger to push the dough into the right fingers.  Again, I should have taken a picture of this!

Then, bake on 375 for 55 to 65 minutes. This one took 55.

And here is my pie!

Ryan assured me it was delicious!

He told me I already won his heart, that he married me. I guess he was saying I didn’t need to win him over with a pie! haha

Oh and one more thing!

What to do with the extra pie crust?

Reroll the extra dough out if need be. Cut into smaller pieces that will fit into muffin pans.

Bake at 375 until brown.

After they are cooked you can use them with yogurt and fruit or ice cream.

Another idea: You could use any extra fruit and mix up another round of pie filling. Then, cook with the fruit in them to make mini pies!

I think learning this new skill of pie making was a success! I enjoyed learning how to make the pie with a good friend and I enjoyed seeing Ryan enjoy eating the pie!

Sometimes we just need to learn a new skill for our spouses! 🙂
