Now that my pregnant body is not convulsing at the thought of vegetables I am trying to make sure I eat a lot of them. I have been reading how baby is now starting to develop taste preferences from what I am eating. So again this calls for fruits and veggies! Last week avocados were on sale so I snatched a few up. I saw a recipe that I wanted to try, but of course put my own spin on it.
Here is an EASY Avocado Feta Salsa recipe. Seriously all it was was chop and stir! Great full of veggies and full of flavor!
Ingredients:
2 firm tomatoes, diced
1 avocado, halved, seeded, peeled and diced
¼ cup red onion, diced
1 clove garlic, minced
1 tablespoon parsley
1/2 tablespoon oregano
1 tablespoon olive oil
1/2 cup crumbled feta cheese
Instructions:
1) Chop needed ingredients.
2) In a medium bowl, combine tomatoes, avocado, onion, garlic, parsley, oregano, and oil.
3)Mix it all together.
4) Add feta, and gently mix it in.
5) Enjoy!
Easy as that! We garnished our baked chicken breast with it. You could even eat it with chips.
