Healthy No Mayo Chicken Salad

Some newlywed couples struggle to eat healthy after marriage. This can cause weight gain, sickness, fatigue and unhappiness. Therefore, we started a little section called Newlywed Recipes where easy healthy recipes can be found! I am reposting this one as it has been a big hit with many!

I was looking for a recipe awhile back for chicken salad that did not contain mayo. With a few adjustments we have a recipe that has become a family favorite! I have been told by people who say they don’t care for chicken salad that they like it and most people are surprised when I tell them it is a healthy chicken salad recipe!

Chicken salad can be healthy! This recipe uses an alternative so there is no mayo. And it still tastes great!

Healthy Chicken Salad Recipe

6oz Shredded Chicken

(I typically use canned for time purposes, but I have cooked my own chicken breast then shredded it.)

1/3 Cup Dried Cranberries

1/4 Cup Sliced or Chopped Almonds

1/4 to 1/2 Small Yellow Onion Diced

1 Small Gala Apple

1/2 Cup Plain or Vanilla Greek Yogurt (Don’t worry you can’t taste the vanillia!)

1/2 Teaspoon Curry Powder

2 Teaspoons Soy Sauce

(We use “less sodium” soy sauce especially if we are using canned chicken as it has salt in it as well.)

Squeeze of Lemon Juice

Chop almonds (if needed), onion and apple. Add chopped items with chicken and cranberries in one bowl. In separate bowl mix yogurt, curry powder, soy sauce and lemon juice. Then add yogurt mix to chicken mix. Stir thoroughly. Add lemon juice to taste. Chill before serving.

Healthy Chicken Salad is great on bread rounds!

A few tips for you:

6oz of chicken says it will serve 3 people. We always use a 12.5 oz can of chicken and double the recipe.

I use vanilla yogurt so the leftover yogurt will be ate. Not many people enjoy eating plain yogurt.

Mixing liquids and spices in yogurt helps it distribute throughout the chicken mixture better.

If you have a Slap Chop I highly recommend using it for this recipe! Makes for easy clean up!

You can refrigerate the can of chicken prior to making the recipe, then when it is made it will be ready to serve!

Experiment with adding halved purple grapes for a new twist!
